Presentation

  • Versatility: 5 cooking modes - forced air - regulated steam - combined - steam - regeneration (depending on versions) - can be combined to suit your requirements.
  • Cooking excellence is ensured by a patented system: the use of removable loaders (in Gastrostandard or Eurostandard format) fitted with specially designed and shaped lateral deflectors. These channel the flow of air, providing a remarkable sole effect - which is generally missing in combined ovens - and completely consistent cooking and colour, whatever the level.
  • This system, which has earned ROSINOX Grandes Cuisines combined ovens their reputation, eliminates the need for devices such as alternating rotation turbines, which use up more power and have no influence on the sole effect.
  • Fine regulation of the cooking temperature through the accuracy of the electronic thermostat; requested temperature kept to both in the oven and at the product core (where a temperature probe is used).
  • Rapid heating up inside the cooking compartment.
  • ROSINOX Grandes Cuisines oven loaders, with their legendary strength - made with thick stainless steel - can take big loads, much greater than standard. They withstand the high stresses that come with frequent use during service which can be continual. Such reliability means that cooking performance is unimpaired over a period of time.
  • The 67 mm spacing between levels means that all the levels can actually be used (65 mm high trays can be used).
  • By simply changing the loader, either Gastrostandard 1/1 trays or Eurostandard trays (600 x 400 mm) can be used.
  • No need to select the cooking time with the core probe ("S" version). This ensures very fine cooking at "just the right" temperature.
  • No need to get involved in complex calculations to determine the humidity level required according to the type, volume and weight of the food to be cooked. ROSINOX Grandes Cuisines combined ovens do that automatically by determining the exact quantity of steam required for optimum cooking.
  • Its system, which is regulated by thermostat and with a sensor placed at the condensates outlet, provides optimum control of steam production required for each type of cooking. The steam production capacity of the ROSINOX Grandes Cuisines combined ovens is generously dimensioned which means that a continuous demand for steam production is supplied.
  • For the TVT and TVTS models fitted with a steam generator, the power to the combined oven is automatically switched off on draining the generator.
  • The device for retarding cooking is particularly suitable for baking fine pastry: it provides stabilisation of the product by delaying the start of the fan by 4 minutes.
  • Venturi evacuation tube to eliminate excess humidity when cooking pastries in forced air mode.

Exemplary ergonomic design

  • Good product visibility during cooking through the panoramic glazed door fitted with floating glass (patented system).
  • Ergonomic, simple to use control panel. Selection of cooking mode and temperature / time pairing by rotary selectors. The values selected can be read directly on the relative digital displays.
  • Transfer trolley for even easier loader handling.
  • Digital controls - with or without programming (optional) - up to 99 multi-sequence cooking programmes (max. 9 sequences) can be stored. Alphanumeric identification of the cooking programmes stored.

Traceability and HACCP

  • Communication board with HACCP output so that the oven can be connected to a PC, a computer network (data transmission) or a printer (on ovens with digital controls only).

The forced air guarantees ideal temperature distribution in the cooking compartment; these ovens are particularly well suited to roasting, pastry making and catering work, whether for Gastrostandard or Eurostandard use (the 40 level models are only available with the Gastrostandard loader).
